On Retropie with Retroarch:
Start the game to be set, then with ALT+TAB to enter the controller menu, position yourself on ANALOG CONTROLS
Modify the DIAL KEY/JOY SPEED and DIAL SENSIVITY parameters by doing several tests until you find the preferred feeling.
